Wahoo’s Fish Taco was founded in Costa Mesa, California, by brothers, Ed and Mingo Lee, along with Wing Lam. The brothers are a Chinese / Brazilian mix. While on a trip through Mexico, they found that mixing Chinese spices with Mexican style food gave ordinary tacos a completely different twist.
When the first restaurant opened, the three men did all the work; taking an order, running to the kitchen to make it, then delivering it to the table and cleaning up afterwards. Today, Wahoo’s Fish Taco has approximately 64 locations in 7 states and one in Tokyo, Japan. The menu is geared towards healthier eating while still enjoying traditional favorites.
