Chef Wes Avila and friend Brittney Vales decided that tacos should be more authentic than what you find at Taco Bell.
The pair started off with the usual catering truck, known in California as Taco Trucks, but it soon became clear that they needed a larger, sit-down location.
In 2012, the pair opened their own restaurant in Los Angeles on 7th Street and retired the Taco Truck in 2018.
The restaurant has seen the usual ups and downs associated with starting a new business. Vales thought that they may not survive the COVID-19 pandemic of 2020-2022 but with some help from the government, they managed to survive.
Business had almost returned to normal in 2023 when, in October, the company was robbed of $20,000 when someone broke into the business and stole the safe.
Vales maintains high hopes that they can survive this as well.
